Vegan Organic Flax Seed Pancakes

Ingredients:
- 1 1/2 cups whole wheat flour
- 2 tbsp. maple syrup
- 2 tsp. baking powder
- 1 tsp. baking soda
- 4 tbsp. flax seed meal
- 1 cup water
- 1 1/2 cup organic unsewted coconut milk
- 1 tsp. vanilla extract
- 2 tbsp. organic canola oil
Directions:
Preheat over to 350.
Sift ingredients in large mixing bowl. Add the rest of the ingredients and mix well. Add more water or coconut oil, if necessary.
Let the mix rest for at least 1 hour.
In a hot cast-iron skillet, pour 1/3 cup per cake. Cook 2 minutes on each side and transfer to the over for 10 minutes to cook through.
