Crudites with Raw Green Onion Ranch Dip
Ingredients
- 2/3 cup raw organic cashews (soaked ~8 hours) *you may also use pre-made cashew butter
- 1/3 cup raw organic brazil nuts (soaked ~8 hours)
- 5 Tablespoons fresh lemon juice
- 5 Tablespoons Apple Cider Vinegar
- 2 Tablespoons Chopped Parsley
- 1 Tablespoon Dill (optional)
- ¾ cup Extra Virgin Olive Oil
- 4 cloves garlic
- 1 ½ Tablespoons Organic Onion Powder
- Water (as needed to blend)
- 3-4 Tablespoons fresh Green onion (chopped)
- Sea salt/Pink salt (to taste)
- Fresh ground black pepper (to taste)
Directions
Combine nuts and/or nut butters in blender with lemon juice, apple cider vinegar and olive oil. Blend till smooth adding water as necessary for consistency.
Add garlic and onion powder blend again until smooth.
Add herbs and salt and pepper and pulse until evenly incorporated.
Place mixture in bowl, add green onions and fold into mixture.
Serve with fresh cut vegetables or your favorite healthy cracker or chip
*When adding water for consistency keep in mind this dip significantly thickens when refrigerated as well as over time.
